Pip's Mini Tasting Menu with English Wine Pairings
Celebrate the best of British produce and the vibrant flavours of the summer season with our Pip Mini Tasting Menu, created by Mary-Ellen McTague. Celebrating the best of local, seasonal produce, this four-course journey blends nostalgic comfort with refined technique—each dish paired with wines from the award-winning Simpsons’ Wine Estate in Kent.
The menu begins with light, savoury Old Winchester Cheese Gougères, a nod to classic British cheese-making, paired with the crisp Chalklands Classic Cuvée alongside the Pip bread plate with rich beef dripping and homemade butter.
Fresh Bedlam Farm asparagus, served with smoked dulse butter and mussel emulsion, captures the essence of early summer, matched with the mineral tones of Gravel Castle Chardonnay. Mary-Ellen's elevated Lancashire Hotpot with braised lamb shoulder with red cabbage, seasonal greens, and oyster ketchup—is both rooted in tradition and full of contemporary flair, complemented by Rabbit Hole Pinot Noir.
To finish, a fragrant Poached Rhubarb with black pepper meringue and rose water cream pairs with the delicate Railway Hill Rosé.
This celebration of the season is available at £30 per person, with optional Simpsons' Wine Estate wine pairing at £20pp. A vegetarian tasting menu is also available.
